RECIPE: Thanksgiving cranberry sauce from Chef Alyssa

Chef Alyssa’s Cranberry Sauce

Makes about 2 cups


2 oranges

1 pound fresh or frozen cranberries

1 cup sugar

2 Tbsp sliced fresh ginger

6 sprigs thyme

1 cinnamon stick

1 granny smith apple, peeled and small diced

½ tsp Aleppo chili pepper


  • Remove the zest from the oranges using a peeler and set them aside. Squeeze the juice from the oranges into a medium sauce pot.
  • Add the cranberries and sugar into the pot and heat on medium high.
  • Meanwhile, place the zest from the oranges along with the ginger, thyme and cinnamon into a cheesecloth sachet tied with butcher’s twine and add it to the cranberries.
  • Allow the pot to cook on medium-low for about 1 hour. If the sauce gets too thick while cooking, add a little water.
  • Turn off the heat and add fold in the diced apples. Add a pinch of salt and Aleppo pepper. Adjust seasoning to taste. Cool and remove the sachet before serving.
